Abstract

Ginger (Zingiber officinale) is a high-value horticultural commodity with strong potential for value-added agro-processing, particularly in response to the growing demand for herbal and functional food products. However, ginger-based micro and small enterprises in Bone Regency, South Sulawesi, face key challenges such as limited production capacity, outdated technology, fluctuating demand, and insufficient strategic planning. This study aimed to analyse the production performance and formulate development strategies for the Tunreng Tellue instant ginger processing enterprise managed by the Mamminasae Women Farmers Group (MWFG). A mixed-methods approach was applied, combining qualitative case study analysis with quantitative tools. Primary data were collected through interviews, observation, and documentation and analysed using production performance indicators—productivity, capacity, quality, flexibility, and process speed—together with IFE, EFE, SWOT, IE, and QSPM matrices. The findings show that the enterprise performs well in terms of productivity, capacity, product quality, and processing speed but remains constrained by limited flexibility and product diversification. The IE matrix places the enterprise in cell V, indicating that a hold-and-maintain strategy is appropriate for this position. QSPM analysis identified three priority strategies: maintaining product quality and halal certification, using digital marketing platforms to enhance visibility and consumer engagement, and strengthening partnerships with government agencies to access technology and financial support. These findings underscore the need for integrated operational and strategic approaches to improve the competitiveness and sustainability of rural agro-industries, particularly those driven by women-led enterprises. Keywords: Agro-industry, women's entrepreneurship, added value, small-scale processing, strategic planning.
