This high albumin makes Snakehead fish widely used for nutraceutical and therapeutic purposes. The extraction process of albumin usually uses a solvent method or so-called conventional extraction method, which still has shortcomings, one of which is not optimal yield. Therefore, the ultrasonic-assisted method is applied in the extraction of Snakehead fish albumin. The aim of this study was to evaluate the characteristics of Snakehead fish albumin extracts extracted by the conventional method (CM) and ultrasonic-assisted extraction (UAE). This research method was conducted by extracting Snakehead fish albumin using aqueous solvent with 2 extraction methods, namely CM and UAE at 50 ℃ and at time variations of 5, 10, 15, and 20 minutes. The results show that the best method for extracting albumin from snakehead fish is the conventional method using a water bath for 10 minutes, which is capable of extracting the highest albumin content, namely 7.49 mg/mL.
