This research looked at how lignocellulolytic fungus, especially Lentinus edodes , can improve the nutritional value of DzW. After 0, 5, 10, and 15 days of fermentation, the first test checked the exact amounts of crude fiber, crude protein, and cellulase enzyme activity. In the second test, they looked at how keeping nitrogen, breaking down crude fiber, and metabolizable energy differed in DzW that had been fermented optimally and DzW that had not been fermented. Lentinus edodes significantly reduced crude fiber, cellulose, and lignin levels during ten days of fermentation. It also enhanced crude protein levels, nitrogen retention, digestibility of crude fiber, and cellulase activity. This suggests its possible use in improving DzW as poultry feed. The conclusion from this study shows that fermenting with Lentinus edodes for 10 days keeps the most nitrogen in food and makes crude fiber easier to digest. This is clear from the fact that the crude protein level is 18.69%, the crude fiber level is 15.69%, the nitrogen retention level is 58.93%, the digestibility level of the crude fiber is 57.02%, and the cellulase activity level is 2.98 IU/ml. ## Keywords - Fermentation - Food science - Biotechnology - Pulp and paper industry - Biology - Engineering --- Sumber: Discover Unhas — RIMS Universitas Hasanuddin.
