Palm sugar quality in Sinjai and Sidrap Regencies analyzed using SNI and proximate composition

Abstract
Abstract Palm sugar is in high demand in international markets because of its advantages, particularly its lower glycemic index (35%) compared to white sugar (65%). However, palm sugar production is not straightforward because the equipment and processing methods remain relatively simple. Therefore, an innovative machine for palm sugar production was developed. This machine has been used in the Sinjai and Sidrap Regencies in South Sulawesi Province. However, this product has not yet undergone content analysis. This study aimed to compare the quality of palm sugar from Sinjai and Sidrap Regencies based on the Indonesian National Standards (SNI) for Palm Sugar and proximate analysis. This study included several tests, namely moisture content, ash content, reducing sugar, heavy metal contamination, carbohydrate, protein, fat, and total caloric content tests. The results indicate that the moisture, ash, and reducing sugar contents met the SNI requirements. Furthermore, the levels of heavy metal contamination in both Sinjai and Sidrap palm sugars complied with the SNI standards, except for Pb contamination. Proximate analysis revealed that Sinjai and Sidrap palm sugar contained 90.3% and 89.9% carbohydrates, 6.51% and 5.13% protein, 0.42% and 2.71% fat, and total caloric values of 3,915 cal/g and 3,342 cal/g, respectively. In conclusion, Sidrap palm sugar exhibited superior quality compared to that of Sinjai.
