Bond characterization and determinationof gelatinization temperature, morphology, and particle size were conducted using Fourier Transform Infrared (FTIR), X-Ray Diffraction (XRD), Scanning Electron Microscopy (SEM), Differential Scanning Colorimetry (DSC), respectively. This isolation produced starch with a yield of 17.2%, amorphous phase portion 78.8%, particle size of 70 nm, and the starch gelatinization process occurred at 67.5°C.
